That’s because mandi uses a special ‘steam-grilling’ process to seal in all the juices and flavour. Traditionally, it was cooked in a hole dug into the desert, but at Mandilicious we’ve updated the process in our state-of-the-art kitchen to ensure that it tastes just as authentic as it did centuries ago.
